1 cup (2 sticks) unsalted butter cut into small pieces
2 cups all-purpose flour
1/2 teaspoon sea salt or kosher
Preheat oven to 350 degrees.
In a large bowl beat together the butter, flour, and salt until crumbly and combined thoroughly. Transfer the mixture to an ungreased 9×9 inch baking dish and pat the crust firmly and evenly into the dish using your hands. Bake for 15 minutes, remove and allow to cool completely.
1 8- ounce package cream cheese
1/2 cup granulated sugar
1 large egg at room temperature
1 teaspoon vanilla extract
8oz apple butter (either homemade or store bought)
- Start by placing 2 cups of old fashioned oatmeal in a medium size mixing bowl.
- Add 1 cup of all-purpose flour.
- Add 3/4 cup of granulated sugar.
- Add 1/4 cup brown sugar (preferably light brown)
- Add 1/4 cup chopped pecans
Combine the cream cheese, sugar, egg and vanilla in a medium size bowl with an electric mixer until creamy. Bake for about 5 minutes until somewhat firm. Then spread 8 ounces of apple butter on top of the cheesecake. Combine the Streusel ingredients together and then spread on top of the apple butter. Bake for 40 minutes, remove and cool completely. Cover tightly with plastic wrap and let it set for 4 or more hours before cutting into squares. Store in an airtight container.
